Surface Decontamination and Shelf-Life Extension of Gilthead Sea Bream by Alternative Washing Treatments

The efficacy of washing and the investigation alternative sanitizing treatments for reduction microbial population are major issues fresh fish seafood. Limited work on effect media fish, particularly gilthead sea bream, one important popular species, has been published no industrial scaling-up reported. objective this study was to systematically evaluate surface decontamination load quality shelf life during subsequent chilled storage. Citric acid (200 ppm 0–10 min), lactic peracetic (0–200 0–4 min) were tested as by immersion gutted bream evaluating their growth physicochemical organoleptic degradation fish. results indicated that with citric ppm, 10 4 significantly delayed spoilage microorganisms (total viable count, Pseudomonas spp., Enterobacteriaceae H2S-producting bacteria) in extended 18 days at 0 °C, compared 11 without treatment. Appropriate handling processing shelf-life extension may enable longer transportation thus open new distant markets, well contribute reduce food waste
